
They say a week is a long time in politics but it can also make a big difference to the rippening and taste of strawberries. And with the recent change to fine weather - the sweet difference it has made to their taste was well evident yesterday when we got some local Union Hall grown berries, some Clonakilty fresh cream and some freshly baked shortbread together for an afternoon summer treat!
A light sprinkling of castor sugar and some freshly squeezed orange juice over the strawberries adds the perfect finishing touch. Growing up in West Cork we'd often head off picking strawberries at this time of year to local neighbours small fruit gardens and end up with the most fragrant bunch back on the kitchen table afterwards. Paired with lightly whipped cream and two or three moderately thin shortbread biscuits, it made the perfect dessert or snack. Ursula suggested opening the champagne just to complete the moment - however with us all soon heading on the road to enjoy the rest of the day - it was felt best to leave it for another day!
