Up to recently, we'd have to deliver our biscuits to storage underneath Terminal 1 and endure probably Dublin's most nerve-wrecking lane-changing maneuvers both entering and exiting!&amp;nbsp;Nowadays, thankfully,&amp;nbsp;we deliver a few miles off-site so happy days.&lt;br /&gt;Wrights are one of Ireland's foremost fishing business and are based on the West Pier in scenic Howth where they have a fabulous fish shop stocked to the brim with the morning's catch. Back at Dublin Airport, they have&amp;nbsp;a number&amp;nbsp;of&amp;nbsp;food outlets to entice travellers with a selection of Ireland's gourmet delights ranging from biscuits to cheeses and alot in-between. Being so far away, Donegal rarely features for us as an immediate getaway destination however a few years ago,&amp;nbsp;I spent a great few days touring the county - even trying a spot of surfing after a tortuous effort in fitting into the wetsuit! &lt;a href="http://www.glenveaghnationalpark.ie/"&gt;Glenveagh National Park&lt;/a&gt; is a spectacular area and well worth a visit with a breathtaking walkway into the castle itself. Typically we ventured here at the tailend of our day and paid only a fleeting stay. Bundoran has developed into a renowned surfing location as well as boosting a fairly lively nightlife and down around Killybegs you can appreciate the importance and history of the fishing trade to the area. A few years back we began to supply Dingle's foremost artisan food producer &lt;a href="http://www.murphysicecream.ie/"&gt;Murphy's IceCream&lt;/a&gt; with some of our retail packs and while mostly delivering to their Killarney outlet, sometimes the trip to Dingle yearns to be made. Murphys are a family owned business who have expanded recently with the opening of new stores in Dublin bringing to 5 in total. Needless to say the icecream is superb and can be found supplied to other fine food stores nationally as well. They've also incorporated a cafe element in some outlets where naturally the brew is top drawer and often comes complimentary from Gavan or Ailish when I drop into Killarney! An example of being customer driven, a suggestion from Murphys as to how they can further pamper their cafe customer led us to our new Cafe Bites which we're from this week beginning to supply. Basically, alongside a customers coffee or tea, a shortbread bite will be added to the saucer as a complimentary gesture from Murphys. We think it's a nice idea and hope to make more of them in the coming months. &lt;/div&gt;&lt;div class="separator" style="clear: both; text-align: center;"&gt;When in Dingle, there is so much to do and I can recommend a cycle around the tip of Slea Head where on a fine day you can get a great view of the Great Blasket Island. Mind you, if its fairly windy, this cycle is not heartily recommended like the gruelling day I attempted it! Being one of our first customers when we started out, we were surprised to learn last year of their closure for a new fit-out lasting nearly 6 months. During that time, Kieran and Carol travelled a fair bit constantly considering new ideas and products for the store and you could not be but impressed with the end result. The new layout has added considerable space internally with a newly created&amp;nbsp;kitchen-wear section as well as extended food shelves and fridge area. Apart from the legendary Blarney stone, the village and the surrounding grounds are enough in themselves to draw and keep you there for an afternoon. The Ummera product range comprised of smoked fish up to a few years ago but has since been increased to include smoked chicken and duck. Infact, the smoked duck won the coveted 3 gold star award at last years Great Taste Awards in the UK. It was refreshing to see how&amp;nbsp;well Anthony has set up his business and the emphasis he has for providing good food of the highest quality. The gold ballotin boxes and&amp;nbsp;the emerald ribbon arrived last week&amp;nbsp;and so&amp;nbsp;without much further ado, we're off baking our first batch of Shamrock Shortbreads!&lt;br /&gt;For&amp;nbsp;us anyway, the biscuit buying begins in earnest around March 17th which I've always put down to the wearing thin of new year's resolutions and general glee about the return of Spring.&amp;nbsp;The harsh winter chill has left the bakery and a more&amp;nbsp;friendlier enthusiasm&amp;nbsp;is received when calling on retailers for orders! We'll be updating our website&amp;nbsp;to faciliate online purchasing of the biscuits so wherever they're required in the world, we'll get them delivered. However, over the past two weeks I've had time to assess where things are going and see what changes are required. Reviewing packaging can nearly turn into a paranoia as it's the first impression customers have of your products and you want it to be spot on. &lt;br /&gt;We spent a great deal of time getting&amp;nbsp;the packaging design of our &lt;a href="http://www.seymours.ie/"&gt;Irish biscuits&lt;/a&gt;&amp;nbsp;ready and thanks&amp;nbsp;to the splendid professional help of Michelle Jones of Microstreet&amp;nbsp;in creating the ideas we gave her into a tangible expression. Michelle works hard and quitely at her business and is ably assisted by her husband Peter O'Donnell.&amp;nbsp;Peter is a fantastically gifted photographer and concentrates on landscape pictures primarily. Based outside Lisnagry village in Limerick, Peter has his own gallery in Castleconnell and sends me emails from time to time&amp;nbsp;with some of his latest shots taken right around the country. With so much turmoil in our financial world and an incessant barrage of depressing news, coming unexpectedly upon Kell was timely and I would have loved to have taken more time and explored the priory, which I believe is Ausgustinian, a whole lot more. Helen Finnegan started making &lt;a href="http://www.knockdrinna.com/"&gt;Knockdrinna&lt;/a&gt; cheese a few years ago and has won numerous cheese accolades for her varieties. So it has been a hectic few weeks since my last post and in the interim, we have been hard at work making sure Christmas orders for Irish biscuits are duly met. Hamper companies, regular local customers and another big German delivery all had to be catered for and thanks to our hardworking bakery team, so far so good.&lt;br /&gt;Whats more, since getting the Seymours website updated to online purchasing during the summer, customers from all over the world now have a stress-free opportunity to buy &lt;a href="http://www.seymours.ie/"&gt;Irish biscuits&lt;/a&gt; online. To-date, we've shipped Irish biscuits to purchasers across Europe and across the United States and sales are improving month on month. One of our first e-customers was from Los Alamos in New Mexico and if you happen to be following&amp;nbsp;movies lately,&amp;nbsp;Los Alamos is the city in which current box office&amp;nbsp;movie &lt;em&gt;&lt;strong&gt;Let Me In&lt;/strong&gt;&lt;/em&gt; is based. Naturally, we were keen to work with the &lt;a href="http://www.ndc.ie/"&gt;NDC&lt;/a&gt; and we'll be supplying them with plenty of our shortbread for the thousands of enthusiasts heading to Athy.&lt;br /&gt;The championships have emerged as a great annual showcase for the agricultural sector over the past few years and apart from the seriousness of the ploughing finals, there is a world of trade stands, food stalls, machinery displays and entertainment provided which will attract more than the farming community to attend. Our snack pack is something we;ll be focussing alot more on in 2011 and hope to work with a leading distributor to grow a stronger retail presence. While the crossing takes about 9 hours it usually is overnight so passengers can atleast try and sleep through and then hit the road running at daybreak. Arriving in Cork, the passengers have easy access to the southern region for onward touring so from a practical point of view it makes perfect sense. When the sun broke through the fog and drizzle, thousands of people descended on Kinsale for the food fair at The Long Quay and everybody was spoilt for choice. From cheese makers, cupcake vendors, seafood stalls (including Anthony Creswell of &lt;a href="http://www.ummera.com/"&gt;Ummera&lt;/a&gt;, who took our photo above!)&amp;nbsp;and icecream carts, it turned out to be some day. &lt;br /&gt;Ursula and myself claimed our corner at the Fuchsia Pavillion which somewhat guarded our new chocolate biscuits from the sun but when temperatures hit the early 20's in the afternoon, we were taking whatever measures imagionary to keep them cool while on display. We sold mostly all by the end of the day and following eight gruelling hours trading, we trapsed home gratefully! The new chocolate biscuit flavours we experimented with were &lt;em&gt;Chocolate Orange&lt;/em&gt;, &lt;em&gt;Kirsch Cherry&lt;/em&gt;, &lt;em&gt;Hazelnut Crunch&lt;/em&gt;, &lt;em&gt;Toasted Almond&lt;/em&gt; and &lt;em&gt;Raspberry Coconut&lt;/em&gt;. As it happens, we wont be able to be there but some of our biscuits will be guest starring with fellow members, Cooleeney Cheese and On The Pigs Back. &lt;br /&gt;This morning I met Breda Maher of Cooleeney to hand over some freshly made cheese biscuits which she is to include in a food kit especially made for the festival. No sooner had I resumed the journey back to Cork when local food store and producer - On The Pigs Back - were on the phone ordering some more cheese biscuits for their display. The three varieties have turned out to be fine products and we often take a break here&amp;nbsp;to indulge in a plate of chilli cheese biscuits, soft cheese and a sweet pepper relish or a fruit chutney. At Christmas time, they fly out the door but somehow I think we'll find a good all year round business developing with them especially in light of recent retailer interest. And with the recent change to fine weather - the sweet difference it has made to their taste was well evident yesterday when we got some local Union Hall grown berries, some Clonakilty fresh cream and some freshly baked shortbread together for an afternoon summer treat!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;A light sprinkling of castor sugar and some freshly squeezed orange juice over the strawberries adds the perfect finishing touch. Growing up in West Cork we'd often head off picking strawberries at this time of year to local neighbours small fruit gardens and end up with the most fragrant bunch back on the kitchen table afterwards. Paired with lightly whipped cream and two or three moderately thin shortbread biscuits, it made the perfect dessert or snack. The shop opened in its present location on Henry Street over a year ago but had earlier been based around the corner in a slightly out of the way spot. Thankfully the move has been a great success with one of the drawbacks being that I now rarely get a few words from either Andrew or Lindsey because they're too busy!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Gone are the days when we'd trash out the issues of the day and discuss new products and packaging ideas as we both had set up around the same time. The shop is perfectly situated on the main street of Kenmare, and has a bubbling cafe attached for good measure. I think the Hills even bake their own bread as well as the many pastry dishes available on-site.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Originally from England, the Hills have settled firmly into the local Kenmare area but even have a Bandon connection with some of their children studying in our local secondary school. I've sometimes had their bacon and cheese pastry pies which I messily devour heading out of the town in my van! They also have a great array of farmhouse cheeses, preserves &amp;amp; sauces. It is an easy job but for some reason, nobody likes to do it here! Yesterday, I stood back after doing a small batch of shortbread and agreed with Ursula here when she said, its goes everywhere! On your cloths, on the floor, all around the tables, onto the wrapping machine, under the ingredient bins - when the sugaring is done, there's a great deal of time sweeping up afterwards. If there's one thing you must have when heading to Val - it's time! Val was one of my first customers to support our bakery and I head there often remembering the first time I made my sales pitch to him! What interests Val is not what you're supplying but who you are and where you come from. This matters because when his real customers start pulling in, he'll be enthralling them with these intimate facts of who makes the products and where. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;So today, Val was busy sorting out his store meticulously when I arrived and now aided by his nephew in-law Andrew, who hails from St Alban, England, the tropical looking store with its splendid range of cheeses and wines was almost ready for the summer season. So I took a small detour over to Castletownshend the other day which is a great spot at this time of the year. I stayed once at the &lt;a href="http://www.castle-townshend.com/"&gt;castle&lt;/a&gt; a few years back with some friends from Germany and its like being emersed back into the 19th century. The view of the bay from castle grounds is really nice and if you head uphill to Saint Barrahane church, a similar astounding vista can be found thru the trees. No introduction is necessary for Kilkenny but if you are anywhere near Middle Abbey Street, seriously consider calling in to Colin Harmon's cafe alongside 'The Twisted Pepper' club. Colin won the 2009 All-Ireland Barista competition and came close to winning the world title in Atlanta and has recently opened this cafe and kindly requested some of our handmade biscuits to complement his coffees. Never one to refuse a free cuppa, Colin made a black from freshly ground Rwandan beans and I have to say, it was the best I've tasted ever. It's a new journey for sure so to all those who don't know me, hello from Bandon, West Cork! I made this pledge over the Christmas holidays to become more tech savvy and establish a more 'with-it' social profile online. My business is still relatively new and developing so I think it's an appropriate time to keep a blog of how we're doing and what's happening in our world. And I'd like to think we've got alot happening to trouble you to read and join in.&lt;br /&gt;&lt;br /&gt;I'm Philip O'Connor and I founded Seymours of Cork biscuit bakery a few short years ago. It's still a teething business but we're going the right way - hopefully!&lt;br /&gt;We make some really good varieties of shortbread, chocolate chip and other flavour biscuits from our base in Bandon, Co.Cork. It's a compact bakery which I equipped during 2008 and to be honest, am still adding bits and bobs to complete.&lt;br /&gt;&lt;br /&gt;So this is the first blog for all to see. It hopefully will create a better understanding of us and how personable we really are.
