It is over three years since we first began to supply the well respected and long established food retailer Wrights of Howth who operate a number of outlets at Dublin Airport in both terminals. Up to recently, we'd have to deliver our biscuits to storage underneath Terminal 1 and endure probably Dublin's most nerve-wrecking lane-changing maneuvers both entering and exiting! Nowadays, thankfully, we deliver a few miles off-site so happy days.
Wrights are one of Ireland's foremost fishing business and are based on the West Pier in scenic Howth where they have a fabulous fish shop stocked to the brim with the morning's catch. Back at Dublin Airport, they have a number of food outlets to entice travellers with a selection of Ireland's gourmet delights ranging from biscuits to cheeses and alot in-between. Wrights also arrange food hampers throughout the year but especially towards Christmas where Seymours biscuits feature amongst wild smoked salmon and Irish whiskey.

The Length of Ireland

We are delighted to say that Seymours Biscuits now covers the length and breadth of Ireland following our most recent retail listing in Co.Donegal. It's a fair distance from our doorstep to Dunfanaghy which lies on the uppermost coastline of Donegal and when we were handing over the boxes to our local courier yesterday, he remarked that we sure were getting bang for our buck in the delivery rates on this one! McAulliffes Craft Shop run by Anne Mac Namara specialises in promoting the finest of Irish craftware from woodwork to pottery and everything in between including our good selves. Being so far away, Donegal rarely features for us as an immediate getaway destination however a few years ago, I spent a great few days touring the county - even trying a spot of surfing after a tortuous effort in fitting into the wetsuit! Glenveagh National Park is a spectacular area and well worth a visit with a breathtaking walkway into the castle itself. Typically we ventured here at the tailend of our day and paid only a fleeting stay. Bundoran has developed into a renowned surfing location as well as boosting a fairly lively nightlife and down around Killybegs you can appreciate the importance and history of the fishing trade to the area. All in all Donegal has plenty to offer.

Murphys IceCream & our new Cafe Bites

Dingle is a fantastic spot especially when the weather is as great as it has been for the past few weeks. A few years back we began to supply Dingle's foremost artisan food producer Murphy's IceCream with some of our retail packs and while mostly delivering to their Killarney outlet, sometimes the trip to Dingle yearns to be made. Murphys are a family owned business who have expanded recently with the opening of new stores in Dublin bringing to 5 in total. Needless to say the icecream is superb and can be found supplied to other fine food stores nationally as well. They've also incorporated a cafe element in some outlets where naturally the brew is top drawer and often comes complimentary from Gavan or Ailish when I drop into Killarney! An example of being customer driven, a suggestion from Murphys as to how they can further pamper their cafe customer led us to our new Cafe Bites which we're from this week beginning to supply. Basically, alongside a customers coffee or tea, a shortbread bite will be added to the saucer as a complimentary gesture from Murphys. We think it's a nice idea and hope to make more of them in the coming months.

When in Dingle, there is so much to do and I can recommend a cycle around the tip of Slea Head where on a fine day you can get a great view of the Great Blasket Island. Mind you, if its fairly windy, this cycle is not heartily recommended like the gruelling day I attempted it! But keep thinking of the abundant seafood and pints of stout waiting to replenish you back in town - once you've popped into Murphys for an icecream and a bite.

The New Cinnamon Cottage

On Saturday I visited the recently revamped Cinnamon Cottage in Cork City where Kieran and Carol Corcoran run a real gem of a food business with natural ease. Being one of our first customers when we started out, we were surprised to learn last year of their closure for a new fit-out lasting nearly 6 months. During that time, Kieran and Carol travelled a fair bit constantly considering new ideas and products for the store and you could not be but impressed with the end result. The new layout has added considerable space internally with a newly created kitchen-wear section as well as extended food shelves and fridge area. A foodies paradise is a most suitable description and you'd have to congratulate Kieran and Carol on their achievement in all respects.

More often than not they are busy when I'm making a delivery but there is always time for a quick chat and catch up on what's happening. Their own selection of pastries, soups, cakes and sauces combined with really unique artisan food items provides the shopper with a mouth watering selection that makes it almost impossible to leave empty handed. Their business is an example to all and well worth a visit.

A bit of Blarney

Few places compare to Blarney Castle just outside Cork City. Apart from the legendary Blarney stone, the village and the surrounding grounds are enough in themselves to draw and keep you there for an afternoon. A few years ago, when once again I was doing a tourism Ireland unpaid service (!), I took a few friends to kiss the stone and managed to do so without anybody even noticing I had more than usual to say afterwards!

From tomorrow, Seymours biscuits will be available to purchase in the recently revamped Mill Cafe and we'll be supplying the Carrigaline Cheese biscuits also. I haven't checked out the cafe but have been reliably informed it's a great spot for passing the time of day. If only I had the time......

Timoleague Blue Skies & Ummera Smoked Duck

A friend of ours was visiting from Germany for St Patricks Day and putting on my tourism Ireland hat, and particularly because it was a super sunny Friday morning, I made contact with Anthony Cresswell of Ummera Smoked Products and hastily arranged a guided tour of his smokery by the banks of the Argideen river outside Timoleague.I've known Anthony for a number of years as we are both members of West Cork Fuchsia Brand and Good Food Ireland so I was in no doubt that he would ensure my guest would receive a cead mille failte and of course he duly did. The Ummera product range comprised of smoked fish up to a few years ago but has since been increased to include smoked chicken and duck. Infact, the smoked duck won the coveted 3 gold star award at last years Great Taste Awards in the UK. It was refreshing to see how well Anthony has set up his business and the emphasis he has for providing good food of the highest quality. He exports to many of the leading stores across the UK and Europe and can be found on the menus of many of Ireland's leading restuarants.
I couldn't resist the smoked duck on offer and later that evening tried it with our Carrigaline cheese biscuits and a plum sauce. Absolutely fabulous if I say so myself. So simple and quick to assemble, it makes the perfect gourmet snack. Yesterday my friend emailed from Germany to express thanks for the brief holiday, the trip to Anthonys and for the splendid good weather - which I'll try and take credit for!

St.Patrick's Day on the horizon!

You know the year is beginning to whiz by when already plans are being made for St.Patrick's Day and so it is with our bakery. The gold ballotin boxes and the emerald ribbon arrived last week and so without much further ado, we're off baking our first batch of Shamrock Shortbreads!
For us anyway, the biscuit buying begins in earnest around March 17th which I've always put down to the wearing thin of new year's resolutions and general glee about the return of Spring. The harsh winter chill has left the bakery and a more friendlier enthusiasm is received when calling on retailers for orders! We'll be updating our website to faciliate online purchasing of the biscuits so wherever they're required in the world, we'll get them delivered. We'd like to take this opportunity to thank photographer Ayna O'Driscoll of Baltimore for producing an amazing set of photos in such a short turnaround also. Now, it's time to get baking......

Shamrock Shortbread

In a blaze of patriotic duty, Seymours will soon make available for a temporary period, our St.Patrick's Day inspired Shamrock Shortbread. We're just putting the finishing touches to the packaging and hope to have it available to purchase online from next week. Presented in a bow-tied gold embossed ballotin, and weighing around 200g, these will be the finest Irish biscuits available to purchase for our national day. We'll also be promoting them in selected stores nationwide as well as through some exclusive gourmet hamper companies. There is nothing like the start of a new year to take stock and review aspects of the business, the bakery, the product flavours - even the personal new years pledges which have already bit the dust! However, over the past two weeks I've had time to assess where things are going and see what changes are required. Reviewing packaging can nearly turn into a paranoia as it's the first impression customers have of your products and you want it to be spot on.
We spent a great deal of time getting the packaging design of our Irish biscuits ready and thanks to the splendid professional help of Michelle Jones of Microstreet in creating the ideas we gave her into a tangible expression. Michelle works hard and quitely at her business and is ably assisted by her husband Peter O'Donnell. Peter is a fantastically gifted photographer and concentrates on landscape pictures primarily. Based outside Lisnagry village in Limerick, Peter has his own gallery in Castleconnell and sends me emails from time to time with some of his latest shots taken right around the country. He also does some product photos as well as family portraits and you can visit his website here. His latest photo 'Winter Frost' is a perfect example of his skill.

We're having a white Christmas in Bandon and while the freezing conditions have made it particularly difficult in getting deliveries to shops for the past three weeks, everybody is putting their economic woes behind them and getting into the spirit of things big-time! We've turned off the ovens here until next week, everybody is racing around getting out to do the annual festive shopping so it's about right that I pen a few words here and wish eveybody who looks at our blog and facebook page a really happy Christmas and hope you all make it safely to the dining table surrounded by family and friends. Retailers and town councils have really put in an enormous effort to brighten up the ambience and I hope our retail customers are rewarded for all their efforts. Once again, until my next post, wishing everybody a great Christmas holiday!

Trip to Kilkenny

It's not very often a Corkman can say something good about Kilkenny but after calling into the small village of Stonyford delivering biscuits to Helen Finnegan yesterday, I'm inclined to break ranks and proclaim a small favourable liking of my journey through the Kilkenny countryside. It was to Helen's farmyard where I was delivering to and after discussing the diabolical state of the nation, she directed me onto Callan via the village of Kells before eventually linking back onto the road to Cork.

Just a few miles outside Stonyford is the walled village of Kells and on approach, in a dim November light, you can glimpse the well intact ruins of an pld priory dating from the 12th century and honestly, it was so noteworthy that I thought I should write it into my bakery's blog!. With so much turmoil in our financial world and an incessant barrage of depressing news, coming unexpectedly upon Kell was timely and I would have loved to have taken more time and explored the priory, which I believe is Ausgustinian, a whole lot more. Helen Finnegan started making Knockdrinna cheese a few years ago and has won numerous cheese accolades for her varieties. We've met in Dublin the past few years at the Christmas Fair and Helen pairs our savoury biscuits with her cheeses and homemade relishes and they go down a treat.

Getting ready for the Chrismas rush!

When you're in the food business, Christmas suddenly appears out of nowhere and I find myself berating myself for not being better organised once again. So it has been a hectic few weeks since my last post and in the interim, we have been hard at work making sure Christmas orders for Irish biscuits are duly met. Hamper companies, regular local customers and another big German delivery all had to be catered for and thanks to our hardworking bakery team, so far so good.
Whats more, since getting the Seymours website updated to online purchasing during the summer, customers from all over the world now have a stress-free opportunity to buy Irish biscuits online. To-date, we've shipped Irish biscuits to purchasers across Europe and across the United States and sales are improving month on month. One of our first e-customers was from Los Alamos in New Mexico and if you happen to be following movies lately, Los Alamos is the city in which current box office movie Let Me In is based. Now I don't think residents in the city will be boosting too loudly as it is portrayed rather bleakly in the movie which I thought was quite good overall.

Visiting West Cork? Don't forget Hosfords!

On the road to West Cork between Bandon and Clonakilty, you pass the entrance to Hosfords Garden Centre and while many are trying to meet time commitments, if you can spare 20 minutes, I would strongly recommend a call to their garden pavillions and great cafe, The Blue Geranium. And you'll probably find owner John Hosford milling about hauling plants indoors or serving customers in the store and should you have any gardening problem that needs solving, I can't think of anyone more knowledgable than John!

The garden centre also comprises a book area where one can find anything from the world of gardening to history and tourist books relating to West Cork and Ireland. There's plenty of artwork from local artists available to purchase, gourmet food from Cork and further afield and tools and garden equipment for the beginner to the avid enthusiast.
Check their website for the times of local markets which John organises throughout the year as well as seeing who is performing in the cafe Sunday afternoons as he organises splendid music free for cafe visitors. So the next time you're heading out west and spot the Hosford entrance, pull in for a few moments and catch up on the finer things that quietly exist out of view.

Biscuits At Ploughing Championships

Next week in Athy, Co.Kildare are the 2010 National Ploughing Championships held over three days, and a few weeks ago, we got a call from the National Dairy Council enquiring about our 2-biscuit snack pack and whether we could supply them for part of their food promotion stand during the event. Naturally, we were keen to work with the NDC and we'll be supplying them with plenty of our shortbread for the thousands of enthusiasts heading to Athy.
The championships have emerged as a great annual showcase for the agricultural sector over the past few years and apart from the seriousness of the ploughing finals, there is a world of trade stands, food stalls, machinery displays and entertainment provided which will attract more than the farming community to attend. Our snack pack is something we;ll be focussing alot more on in 2011 and hope to work with a leading distributor to grow a stronger retail presence. As well as shortbread, we make them also in Chocolate Chip variety and make the perfect accompaniment to coffee 'on the go'.
So if you're heading to Athy, make sure and pop in to the NDC pavillion for a taste of our finest West Cork shortbread which we're busy baking all this week!

Our first delivery to Germany.

Wow! It has been a most unbelievable 6 weeks since I was last able to make a blog posting and it's good to have some time again to sit down and write. Well most of that time was spent baking naturally - with our first order being collected in late August for supply to Germany. With our small capacity, all hands were on deck to ensure baking and packaging ran smoothly and thankfully they did! So, now I am delighted to be able to confirm that Seymours handmade biscuits can now be purchased on the high streets throughout Germany.

This marks the second export market for us as we also supply a specialist retailer in France so we were confident we could increase supply to new potential retail customers and through our market importer, FFG - we now supply the German retailer Strauss Innovation who have 95 great stores nationwide. August was therefore very busy and finished with a few days break, which everybody was delighted to receive at the end of the month, we are all back in business again this week.

On The High Seas

Since we started a few years ago, one of our first retailer targets were Cork and Dublin airports and thankfully they've been great sales providers to us from day 1. So when the ferry link between Cork and Swansea resumed in the spring, we were keen to get on board and from this week it is now possible to purchase our Original Shortbread and Cranberry & Almond in the ferry shop on the Julia liner, run by Fastnet Line.

Despite their inauspicious start this year, the ferry is successfully making its daily crossing between Ireland and Wales and a few weeks ago during the Clipper food festival in Kinsale, we couldn't get over the volume of tourists either just arrived on the ferry or on their way back. While the crossing takes about 9 hours it usually is overnight so passengers can atleast try and sleep through and then hit the road running at daybreak. Arriving in Cork, the passengers have easy access to the southern region for onward touring so from a practical point of view it makes perfect sense. And with a 9 hour sailing, surely all passengers will browse the food shelves and stock up on our finest - hopefully!.

Food Festival in Kinsale

The last week has been fairly busy culminating in taking part in the Kinsale Clipper Food Festival on Sunday, July 3rd. When the sun broke through the fog and drizzle, thousands of people descended on Kinsale for the food fair at The Long Quay and everybody was spoilt for choice. From cheese makers, cupcake vendors, seafood stalls (including Anthony Creswell of Ummera, who took our photo above!) and icecream carts, it turned out to be some day.
Ursula and myself claimed our corner at the Fuchsia Pavillion which somewhat guarded our new chocolate biscuits from the sun but when temperatures hit the early 20's in the afternoon, we were taking whatever measures imagionary to keep them cool while on display. We sold mostly all by the end of the day and following eight gruelling hours trading, we trapsed home gratefully! The new chocolate biscuit flavours we experimented with were Chocolate Orange, Kirsch Cherry, Hazelnut Crunch, Toasted Almond and Raspberry Coconut. At first the Hazelnut Crunch proved most popular but with a sweeping run, the Chocolate Orange and Kirsch Cherry overtook and probably shared the No.1 slot at day's end.

Another great feature of taking part in these fairs is the meeting up with fellow food producers from the area and we shared the pavillion with Jeffa Gill of Durras Cheese, Anthony Creswell with his delicious smoked salmon and Iain Flynn of Flynns Kitchen, Riverstick who came with jars of preserves and chutneys which were well subscribed. All in all a great day.

Cheese & Wine At The Curragh

If you are near the Curragh this weekend in County Kildare, then consider heading to the Dubai Duty Free Irish Derby for a great day out this Saturday where you should also pop over to the Good Food Ireland food fair to sample some of Ireland's fine food producers. As it happens, we wont be able to be there but some of our biscuits will be guest starring with fellow members, Cooleeney Cheese and On The Pigs Back.
This morning I met Breda Maher of Cooleeney to hand over some freshly made cheese biscuits which she is to include in a food kit especially made for the festival. No sooner had I resumed the journey back to Cork when local food store and producer - On The Pigs Back - were on the phone ordering some more cheese biscuits for their display. So if you can't find one - keep an eye out for the other!

Our cheese biscuits are a developing product line for us and we started them following a request from Pat O'Farrell of Carrigaline Cheese. The three varieties have turned out to be fine products and we often take a break here to indulge in a plate of chilli cheese biscuits, soft cheese and a sweet pepper relish or a fruit chutney. At Christmas time, they fly out the door but somehow I think we'll find a good all year round business developing with them especially in light of recent retailer interest. So watch this space!

Strawberries & Cream Time

They say a week is a long time in politics but it can also make a big difference to the rippening and taste of strawberries. And with the recent change to fine weather - the sweet difference it has made to their taste was well evident yesterday when we got some local Union Hall grown berries, some Clonakilty fresh cream and some freshly baked shortbread together for an afternoon summer treat!

A light sprinkling of castor sugar and some freshly squeezed orange juice over the strawberries adds the perfect finishing touch. Growing up in West Cork we'd often head off picking strawberries at this time of year to local neighbours small fruit gardens and end up with the most fragrant bunch back on the kitchen table afterwards. Paired with lightly whipped cream and two or three moderately thin shortbread biscuits, it made the perfect dessert or snack. Ursula suggested opening the champagne just to complete the moment - however with us all soon heading on the road to enjoy the rest of the day - it was felt best to leave it for another day!

Kenmare's Finest - The Truffle Pig

Earlier today I delivered to Andrew & Lindsey Hill, owners of the fine food store and cafe - The Truffle Pig in Kenmare, Co.Kerry. The shop opened in its present location on Henry Street over a year ago but had earlier been based around the corner in a slightly out of the way spot. Thankfully the move has been a great success with one of the drawbacks being that I now rarely get a few words from either Andrew or Lindsey because they're too busy!

Gone are the days when we'd trash out the issues of the day and discuss new products and packaging ideas as we both had set up around the same time. The shop is perfectly situated on the main street of Kenmare, and has a bubbling cafe attached for good measure. I think the Hills even bake their own bread as well as the many pastry dishes available on-site.

Originally from England, the Hills have settled firmly into the local Kenmare area but even have a Bandon connection with some of their children studying in our local secondary school. I've sometimes had their bacon and cheese pastry pies which I messily devour heading out of the town in my van! They also have a great array of farmhouse cheeses, preserves & sauces. As well as our biccies.

Console Yourself - It's Raining Here!

I obviously jinxed it a few weeks ago by daring to wonder had our summer arrived - because over the past couple of days, it appears to have resoundedly decided to open the floodgates around Cork with a severe rainfall this evening and all day yesterday. Adding The Sugar

We fight in the bakery all the time as to whose job it is to add the sugar! It is an easy job but for some reason, nobody likes to do it here! Yesterday, I stood back after doing a small batch of shortbread and agreed with Ursula here when she said, its goes everywhere! On your cloths, on the floor, all around the tables, onto the wrapping machine, under the ingredient bins - when the sugaring is done, there's a great deal of time sweeping up afterwards. So maybe the next time you crack open a pack of shortbread, spare a small thought for Ursula, who had to do the tidying up afterwards!

A Chat in Mannings - Ballylickey!

Today I made a long overdue return visit to Val Mannings Food Emporium in Ballylickey, West Cork. If there's one thing you must have when heading to Val - it's time! Val was one of my first customers to support our bakery and I head there often remembering the first time I made my sales pitch to him! What interests Val is not what you're supplying but who you are and where you come from. This matters because when his real customers start pulling in, he'll be enthralling them with these intimate facts of who makes the products and where.

So today, Val was busy sorting out his store meticulously when I arrived and now aided by his nephew in-law Andrew, who hails from St Alban, England, the tropical looking store with its splendid range of cheeses and wines was almost ready for the summer season. I hope it'll be a good one Val!

Has Summer Arrived?

Any excuse to deliver around Skibbereen is a welcoming break from the bakery heat and with this recent good spell, there are few better places to escape off to than roaming the boreens of West Cork. So I took a small detour over to Castletownshend the other day which is a great spot at this time of the year. I stayed once at the castle a few years back with some friends from Germany and its like being emersed back into the 19th century. The view of the bay from castle grounds is really nice and if you head uphill to Saint Barrahane church, a similar astounding vista can be found thru the trees. During the summer, they usually have interesting musicians playing in the church as well so worth checking out.

The Guild of Fine Food - Member since 2006

Seymours of Cork is a member of the Guild of Fine Foods. This UK based fine food development body promotes the interests of independent food retailers and fine food producers across Great Britain and Ireland also.

What we like about the Guild is their ernest endeavours to strengthen links between consumers and the food producers of their product choices. This link is rarely served through the impersonal nature of supermarkets. Instead the knowledge independent retailers have of the food producers through their direct contact with them can then be conveyed to the consumer.

Seymours of Cork works with a select number of supermarket stores in Ireland. The handful chosen are ones we know have our interests genuinely at heart. For instance, we supply Scallys Supervalu store in Clonakilty where Eugene Scally and Michael Walsh there really set out to give us the prominent space on the shelves, the personal guidance of price points, the opportunity to do tastings when it suits us. Earlier today I delivered to Dublin where I've begun delivering to two new customers - Kilkenny Store on Nassau Street and Third Floor Espresso on Middle Abbey Street. No introduction is necessary for Kilkenny but if you are anywhere near Middle Abbey Street, seriously consider calling in to Colin Harmon's cafe alongside 'The Twisted Pepper' club. Colin won the 2009 All-Ireland Barista competition and came close to winning the world title in Atlanta and has recently opened this cafe and kindly requested some of our handmade biscuits to complement his coffees. Never one to refuse a free cuppa, Colin made a black from freshly ground Rwandan beans and I have to say, it was the best I've tasted ever. Do get down there if nearby.

You can find these in some of the best shops in Ireland. They are also available in Cork & Dublin airports where they sell very well. Since last April, we supply a French retail chain of 41 stores all around France so when you're there on holidays, be sure to keep an eye out for us!

GREETINGS!
To those who know me, they'll realise this monumental occasion of my first attempt at blogging! It's a new journey for sure so to all those who don't know me, hello from Bandon, West Cork! I made this pledge over the Christmas holidays to become more tech savvy and establish a more 'with-it' social profile online. My business is still relatively new and developing so I think it's an appropriate time to keep a blog of how we're doing and what's happening in our world. And I'd like to think we've got alot happening to trouble you to read and join in.

I'm Philip O'Connor and I founded Seymours of Cork biscuit bakery a few short years ago. It's still a teething business but we're going the right way - hopefully!
We make some really good varieties of shortbread, chocolate chip and other flavour biscuits from our base in Bandon, Co.Cork. It's a compact bakery which I equipped during 2008 and to be honest, am still adding bits and bobs to complete.

So this is the first blog for all to see. It hopefully will create a better understanding of us and how personable we really are. So welcome aboard!
